Mayer Lemon Cake




















Mayer lemon is mostly imported in Taiwan. Like limes, it is more popular to be used in drinks than desserts these days. For those not-so-experienced bakers(such as myself), I highly recommend to try this cake first because its very easy to make, and even it collapsed in the mold like mine did during baking, it is still very tasty and moist.

You will need:
200g of cake flour
110g of butter
100g of sugar
1g of baking soda
1g of salt
100g of yogurt
zest of 2 lemon
80g of lemon juice
1/2 vanilla bean

to make 1 - 17x6x8cm mold.
